This sparkling is a multi-vintage blend of 60% Pinot Noir, 40% Chardonnay, all grown at our cool-climate Bowral vineyards at 750m altitude. The breakdown is 83% 2008, 9% 2007, 8% 2006.
It has been made using the traditional method of bottle fermentation, and was tiraged for secondary fermentation in December 2008.
As this wine had amazing purity and structure with beautiful natural acidity and balance, it was decided to leave the wine on yeast lees for an extended period of time to gain complexity. Not every sparkling wine is capable of ageing for this length of time, it needs to have a very low pH (measure of acidity), flavour, structure, absence of disease, and a certain x-factor. Only 1344 bottles were made.
For 9 ½ years it sat in a cool and dark warehouse resting, until it was disgorged (process of removing yeast lees, topping up, corking & wiring, hood application) in June 2018.
During this time the dead yeast cells that conducted the secondary fermentation (formation of CO2 gas – fizz) break down releasing flavours into the wine (yeasty/nutty/almond/brioche/pastry) and adding a creamy texture to the palate (making it more attractive to drink).
Most of our sparklings spend upwards of 3 years on lees, with BDB & BDN about 5 years.
The nose shows mature sparkling aromas of almond yeast/pastry, wax, with smoky strawberry and citrus hints.
The palate exudes finesse, balance and length of flavour. It is fine and pure with energetic ripe strawberry, grapefruit, and hints of white nectarine. Tight chardonnay acid draws out the finish.
The dosage level is 7.5g/L and comes across on the drier and more serious side due to the high natural acidity.
There are only 698 bottles available in this disgorgement.

Gruner is one of the major varieties grown in Austria (over 1/3 of all plantings) and because of its versatility can produce a range of styles from light, crisp and youthful to rich and full-bodied depending on the microclimate. Some producers even make dessert wine and sparklings. Grüner means green in German.
Gruner is often described as similar to Riesling but with a bit more richness and a distinctively peppery aroma and flavour. Yellow apple, green pear, green bean, and white pepper are common descriptors.
This wine was made entirely from fruit grown in our Bowral Vineyards and is our first release of Gruner Veltliner.
On the nose there are fresh green herb aromas, celery, green vegetable, with a dash of stonefruit and citrus fruit character.
The ripe palate has nice weight and texture, with balanced acidity, featuring delicious stonefruit and subtle honey flavours.
Pair with spicy Asian vegetable dishes or Japanese. Or just try where you would normally have Riesling.

Limited Release Shiraz 2015 $44.99 There are full and seductive aromas of cocoa, chocolate, blackberry, spicy dark plum, five-spice, and a sprinkling of ripe herbs. The full-bodied and concentrated palate has beautiful ripe fruit flavours with silky, ripe tannins and wonderful texture. This wine is perfect with red meat right now but will harmonise further in bottle over the next 5 years. Only 125 dozen produced.
Reserve Shiraz 2016 $33.99
The fruit in our latest Reserve Shiraz is grown at Angullong vineyard in Orange NSW, at 660m altitude. This vintage shows ripe and concentrated Shiraz character as a result of warm and dry growing conditions throughout the 2016 season. There are seductive aromas of blackberry, spiced dark plum, black olive, mocha and licorice.This wine is perfect with red meat right now but will harmonise further in bottle over the next few years. A harmless deposit could form due to minimal filtration.For best enjoyment, remove cork and let breathe for an hour before serving. Drink now until 2024.

This bottle fermented sparkling Rosé has a light salmon pink colour and shows complex aromas of strawberry, cherry, dried fruits, honey, and yeast. Great as an aperitif. The palate has great poise and focus, with good richness and palate weight, and has wonderful crisp natural acidity that flows all the way through the clean, savoury finish.Great with hor d'oeuvres.
Reserve Shiraz Viognier 2016 $33.99
The perfumed nose shows ripe, dark fruit flavours (blackberry, black plum, prune), ripe spices, with very subtle coffee and chocolate oak. The full-bodied palate has beautifully ripe and elegant flavours with a lovely lacing of ripe, silky tannin.Perfect with red meat. Drink now to 2023.
In 1998 we were busily planning our first plantings, the Road Block vineyard . This year we celebrate our 20th anniversary. A lot has happened since then, two new vineyards at Bowral plus the purchase of our Orange vineyard. We started with only 6 wines for sale and today we currently have 35 wines on tasting. We have been diligent in increasing our quality and conservative in its pricing. We achieved early recognition from James Halliday’s Wine Companion and overtime increased our rating to the top,with the 5 red star ( placing us in the top 10% of all Australian wineries). As part of the Southern Highlands Wine Time Festival, visitors to Centennial Vineyards had the opportunity to participate in guided walks through the vineyard. This was the first time such an event had been offered at Centennial and the walks were organized for three Saturdays in March.
Visitors met at the Cellar Door and walked across the restaurant courtyard into the Winery Block vineyard. Here they were shown mature Tempranillo vines, newly planted exotic clones of Pinot Noir, old Tempranillo vines grafted over to modern clones of Pinot Gris, and a number of different clones of mature Sauvignon Blanc. The tour leader described how and why grafting was done and what a specialised skill grafting is.
Walking between the rows, visitors learnt about netting prior to harvest, leaf plucking and canopy management.
There was also the opportunity to taste fruit straight off our Chardonnay vines, the source of our multi-award winning Woodside Winery Block Chardonnay. A strategically placed Esky revealed wine sourced from this vineyard and everyone got to taste the fruit on the vine, then the wine made from that fruit in a prior vintage.
Oscar and Emmy, our resident vineyard dogs joined the walk on at least one of the Saturdays and were under strict instructions not to eat the grapes!
The walks finished back at Cellar Door, where visitors had the opportunity to taste a selection of Centennial's wines.
Our winter lawn mowers are back in the vineyard! The sheep arrived at the farm a month ago and have been in the House Block vineyard. They have done a great job of eating down the grass and weeds. Here is a photo of us moving them to the Old Block vineyard on Friday.
After the vintages of 2011 (average) and 2012 (poor) we approached the start of the 2013 vintage with apprehension and a lot of hope. We survived it, although having to run the gauntlet of weather events, to find it was an excellent vintage. The winery is bursting with extremely good wine.
It started in September with a good budburst promising a moderate crop. Warm weather during spring resulted in good fruit set, but not before we got snow in October (rare but spectacular): thankfully it caused no damage to crop or vine. November, December and January were very warm to hot, and with below average rainfall, we were looking good with the crop about 2-3 weeks ahead of normal. Then came February and back to normal with rainy conditions until early March, threatening to undo all the progress we had achieved. We were worried, but by mid-March we saw the onset of autumn, the skies turned blue and ripening was near perfect. Remember that in the Southern Highlands we have one of the longest growing/ripening seasons for grapes in the whole of Australia, so anything that can happen with the weather usually does.
ll the wines requiring wood are happily resting in their French oak barrels, while the fresh young unwooded whites are getting ready for bottling in late July. These you will start seeing once they have rested and are ready for release.
Trophies for Centennial- Huon Hooke, SMH Good Food Tuesday March 19, 2013
"Southern Highlands winery Centennial Vineyards performed strongly at the Dan Murphy's 2013 Australian Highlands Wine Show. It won trophies for its 2011 Reserve Orange Shiraz Viognier (best Shiraz and best red wine) and 2010 Woodside Winery Block Chardonnay (best Chardonnay). Centennial's two 2011 pinot noirs - Woodside and Reserve Orange - won gold medals, while its three non-vintage sparkling wines won two bronzes and a silver (a very fine blanc de blancs)." Huon was a judge at the show.
