This wine was made entirely from fruit from our Bowral Vineyards. Following selective hand-picking in the vineyard, the juice was cold fermented at 12 °C.
Enticing Riesling aromas of apple and lime precede a gloriously balanced palate that is focused and tight. Lively palate flavours of freshly crushed apple and lime explode in the mouth, supported by a lovely acid structure, finishing with a crispness and purity that lingers forever.
As this wine has elevated natural acidity, it will age well developing palate texture and complexity of flavour.
Fantastic Summer lunch wine, great as an aperitif, and perfect with fresh seafood.

Only serve cold.
"Pale colour; the bouquet is restrained and savoury, with lemon rind, fennel and ginger; the palate delivers a little generosity from the 6g/l of residual sugar, finishing for the most part dry and chalky. 92 points" James Halliday, Australian Wine Companion 2013
