Our Reserve Pinot Noir is made entirely from fruit grown here at the Bowral vineyards and tends to produce a delicate and perfumed style. Wild fermentation of our House block 115 clones together with whole bunch fermentation has added complexity to the primary red fruit.
It has a complex nose of spicy cherry, raspberry, herbs, ripe spices, and some interesting rich, sweet soil characters. The subtle supportive oak provides depth to the aroma.
The palate is light-bodied, soft and silky, with juicy cherry, beetroot, and raspberry flavours, leading into a long and satisfying finish. True to our vineyard it is elegant and finely detailed. The tannins could do with 3-6 months to harmonise further.
Minimal filtration may result in a small deposit with time. Great with fuller flavoured dishes such as veal, chicken, duck.
