This wine is a multi-vintage blend of 60% Pinot Noir, 37% Chardonnay, and 3% Pinot Meunier, all grown at our cool-climate Bowral vineyards at 700m altitude.
It has been made using the traditional method of bottle fermentation, and shows complex aromas of yeast, nectarine/citrus and brioche.
The elegant palate is citrus/grapefruit-driven, and has wonderful crisp natural acidity that finishes long, clean, and savoury.
Great as an aperitif.

Hope all is well with you.
I thought you would like to know about my recent Champagne Showdown. It is one of the public experiences I run.
Six Champagnes initially tasted blind and then run as a masterclass. However, I always put one Aussie in there. On Saturday the lineup was Taittinger, Moet, Veuve, Perrier Jouet, Centennial Chardonnay Pinot Noir, Bollinger. Twelve tasters are asked to taste the bubbles blind and rate their top three. 3 points for the best, 2 points for their second favourite, 1 point for the third.
Well the good news is that blind tasted…Centennial came out top with 17 points. Pretty good huh! Congratulations.

“Nothing better illustrates the Southern Highlands’ peculiar climate than Centennial’s superb sparkling wines – quality more expected of Tasminia or southern Victoria. Its Blanc de blancs ($28-$37) and Extreme Brut ($26.60-$30) are impressive. But on a recent cellar-door visit, I favoured this blend of pinot noir and chardonnay. It shoes power and elegance – that unique combination of pinot strength and chardonnay finesse, with the subtle background flavour and texture derived from prolonged ageing on yeast cells following secondary fermentation.” Chris Shanahan, Canberra Times 7/11/12
“(at National Cool Climate Wine Show) Bowral (NSW) based Centennial Vineyards continues to add to its impressive trophy record. Centennial entered three wines in the 44 strong sparkling class and came away with two golds and a silver. This wine has an attractive, complex bready aroma, a long, fresh, intense palate and a creamy mousse. An ideal choice for Christmas and New Year. ($28.00) Highly Recommended” Lester Jesberg, Winewise November 2013
