Description
Centennial Vineyards Limited Release Blanc De Noirs is a non-vintage sparkling wine made entirely from selected Pinot Noir (100%) parcels from within our Bowral vineyards in the Southern Highlands of NSW grown at 750m in altitude. This wine is only made in small quantities when the fruit quality is exceptional. This is our second release of this wine and consists largely of 2011 vintage (65%) with the balance coming from the 2010 vintage (35%).
Every vine is hand pruned and cropped very lightly, the fruit hand-picked and sorted, and then minimally handled in the winery. The many individual base wines are aged until they harmonise and reveal their true character before blending to achieve the perfect balance. The final blend is then given the méthode traditionelle of bottle fermentation and ageing on yeast lees for 62 months.
The nose has complex aromas of almond biscuit, earthy mushroom, with yellow apple and pear aromas, and some aged wine character. The palate is full-flavoured, with creamy pear juice, ripe golden delicious apple, and a beautiful dry finish. The complexity and creamy palate reflect well the 62 months on lees. Best enjoyed as sparkling paired with food.
