Description
Our non vintage Blanc de Blancs was made entirely from selected Chardonnay parcels from within our Bowral vineyards in the Southern Highlands, and is only made in small quantities when the fruit quality is exceptional. Every vine is hand pruned and cropped very lightly, the fruit hand–picked and sorted, and then minimally handled in our state-of-the-art winery. The many individual base wines are aged until they harmonise and reveal their true character before blending to achieve the perfect balance. The final blend is then given the méthode traditionelle of bottle fermentation and ageing on yeast lees for an extended period of time. The nose has complex aromas of ripe grapefruit/citrus, almond yeast, vanilla, and some nutty caramel biscuit. The generous palate is ripe and full-flavoured, with pink grapefruit flavours, subtle vanilla, and juicy acid. The complexity and creaminess reflect well the 47 months on lees. Above all, this rich and complex sparkling is a wonderful expression of climate, nurture, and patience.

This is a remarkable suite of fizz, catapulting a Southern Highlands vigneron into a rarified strata of top domestic producers. This, by far the top cuvée of this impressive range. Straight-laced chardonnay. Bready, creamy and luxe, made in the style of long lees-aged champagnes. Inflections of oyster shell, truffle and iodine. Picks up steam with air, billowing across the palate while driven long by chalky mineral crunch and juicy acidity. Very fine.
