Our non vintage Blanc de Blancs was made entirely from selected Chardonnay parcels from within our Bowral vineyards in the Southern Highlands, and is only made in small quantities when the fruit quality is exceptional. Every vine is hand pruned and cropped very lightly, the fruit hand–picked and sorted, and then minimally handled in our state-of-the-art winery. The many individual base wines are aged until they harmonise and reveal their true character before blending to achieve the perfect balance. The final blend is then given the méthode traditionelle of bottle fermentation and ageing on yeast lees for an extended period of time. The nose has complex aromas of ripe grapefruit/citrus, almond yeast, vanilla, and some nutty caramel biscuit. The generous palate is ripe and full-flavoured, with pink grapefruit flavours, subtle vanilla, and juicy acid. The complexity and creaminess reflect well the 47 months on lees. Above all, this rich and complex sparkling is a wonderful expression of climate, nurture, and patience.

★ ★ ★ ★ ★ Winestate Magazine "This leading winery in Bowral makes several bubblies but this pure-chardonnay wine is the best - the most refined and intense and palate-thrilling. The bouquet has toasty, bready aromes from time in contact with its yeast lees, while the palate is streamlined, crisp and tight, enlivened by lemony acidity which drives its persistence. The ultimate aperitif, perhaps with freshly shucked oysters." Huon Hooke, Sydney Morning Herald 3/2/15 “Most bubblies emulating France’s Champagne-style combine chardonnay with the red variety pinot noir and sometimes pinot meunier. The pinots add backbone, and in the case of meunier, flesh to the blend. Exceptional chardonnay, however, can stand on its own as it does in Centennial’s beautiful Blanc de Blancs – the trophy winner at this year’s Canberra regional show. The very cool climate delivers high-acid grapes with intense grapefruit-like varietal flavour – a lean, austere combination that transforms to a delicious, rich elegance after three-and-a-half years’ bottle age.” Chris Shanahan, Canberra Times 21/11/12 “
From selected blocks in the estate vineyards in Bowral, aged for 42 months on lees prior to disgorgement. A vital and intense Blanc de Blancs, long and focussed; grapefruit, stone fruit and some almond/creamy yeast nuances; a long and even finish. Diam. 12.5% alc. Rating 95 To 2015”

This is a remarkable suite of fizz, catapulting a Southern Highlands vigneron into a rarified strata of top domestic producers. This, by far the top cuvée of this impressive range. Straight-laced chardonnay. Bready, creamy and luxe, made in the style of long lees-aged champagnes. Inflections of oyster shell, truffle and iodine. Picks up steam with air, billowing across the palate while driven long by chalky mineral crunch and juicy acidity. Very fine.
