This wine was made entirely from fruit grown at our Bowral vineyards using the 667 clone of Pinot Noir. 2018 yielded very small berries in this block which has created a concentrated and perfumed style with excellent varietal definition.
20% wholebunch fruit was included in the ferment.
Fragrant earthy cherry, raspberry, rhubarb, and enticing herbs/spices. The palate has great mouthfeel and texture, with fleshy red berry fruit, and an enticing silky finish.
Fermentation and maturation in new (18%) and seasoned French oak has added texture and complexity to this wine.
Minimal filtration may result in a small deposit with time.
Best enjoyed with fuller flavoured dishes such as veal, chicken, duck.
