NV Blanc de Blancs
Our non-vintage Blanc de Blancs was made entirely from selected Chardonnay parcels from within our Bowral vineyards in the Southern Highlands and is only made in small quantities when the fruit quality is exceptional. Every vine is hand pruned and cropped very lightly, the fruit hand-picked and sorted, and then minimally handled in our state-of-the-art winery. The many individual base wines are aged until they harmonise and reveal their true character before blending to achieve the perfect balance. The final blend is then given the méthode traditionelle of bottle fermentation and ageing on yeast lees for an extended period.
The nose has complex aromas of grapefruit/citrus, sea spray, candle wax, honey, with some nutty almond biscuit. The stylish palate is again complex, with good richness of flavour and a touch of creaminess, some subtle vanilla, and lovely palate cleansing grapefruit acidity, finishing long and dry. The freshness, complexity and finesse are beautifully balanced reflecting well the 48 months on lees.
Above all, this fine, elegant, complex sparkling is a wonderful expression of climate, hand-tended vines, nurture, and patience. Serve chilled with hors d’oeuvres.
2019 Reserve Albarino
Estate-grown, aromas of nuts, lees, citrus – ruby grapefruit, mandarin zest, orange. The fully flavoured and very lively palate has crisp citrussy acid running alongside the mandarin, tangerine and grapefruit flavours. The lees ageing has added texture and volume resulting in an excellent summer wine. Drink now to 2026. Serve with fresh summer seafood and salads.
2018 Reserve Bridge Creek Rondinella Corvina
We are one of only two growers in Australia of these classic and very unique varietals. The classic Ripasso della Valpolicella wine styles are the inspiration for this unique and delicious wine whereby the inclusion of partially dried grapes (using a prune dehydrator) to the ferment has concentrated the must, adding prune, fruitcake, dried fruit aromas and a textural, velvety palate. Delicious, juicy chocolate cherry flavours feature throughout the palate whilst requisite ripe, silky tannins assure partnership with food. Best enjoyed below room temperature, ideally 15-17 celsius. Great with osso bucco. Drink now to 2026.
