NV Classic Brut
This wine is a non-vintage blend of 56% Pinot Noir, 30% Chardonnay, and 14% Pinot Meunier, all grown in our cool-climate Bowral vineyards at 700m altitude, assembled from many base wines with the majority from the cool 2023 vintage.
It has been made using the traditional method of bottle fermentation and ageing on yeast lees for 21 months. The bright and elegant nose reveals fresh red apple, nectarine, almond custard, and subtle creamy lees notes. The cooler vintage has created a detailed and flavoursome style with ripe acidity, red apple, pear and nectarine palate flavours finishing clean and dry. Superb as an aperitif, yet just as enjoyable when paired throughout a meal.
Tiraged: December 2023. Disgorged: September 2025. Time on lees: 21 months. Dosage: 5.0g/L.
Paired with: Yellowfin Tuna Tostada, Avocado, Lime
2025 Reserve Pinot Blanc
The 2026 Reserve Southern Highlands Pinot Blanc is made from fruit grown at the Yaraandoo Vineyard. The attractive nose offers spicy red apple and nashi pear aromas. The generously flavoured palate has beautiful, ripe red apple and spiced pear flavours with balanced acidity and gorgeous texture as a result of lees stirring after fermentation. Pinot Blanc, with its delicate and versatile flavour profile, pairs well with light poultry, seafood, salads, and creamy pasta sauces. Drink now to 2029.

2024 Reserve Bridge Creek Chardonnay
This wine was grown at our Bridge Creek Vineyard, Orange, NSW, at 880m altitude, and is our third Chardonnay release from this site. Vines were cropped lowly in the warm and dry 2024 growing season producing beautiful, clean fruit with excellent acidity.
Reserve Bridge Creek Chardonnay is a celebration of our elevated vineyard in Orange and tends to be a very pure expression of Chardonnay with wonderful elegance and acidity. Traditional winemaking techniques are used to enhance complexity and balance, and only the best barrels make it into the final blend. The growing season was warmer than average resulting in yellow apple and stone fruit flavours with excellent natural acid retention.
Whole bunch pressing followed by wild fermentation of high solids juice in top quality French oak barrels has added spice, wax, lees, malt biscuit and hints of grilled nut and nougat aromas to the apple and stone fruit core. The finely honed and pure palate has fantastic apple and nectarine flavours together with supporting textural interest. An elegant, pure, focussed and complex cool-climate Chardonnay style that partners well with coq au vin, roast chicken and veal. Great drinking now, but will gain further harmony in time. Drink now to 2033.
Paired with: Baby Vannella Burrata, Seasonal Stone Fruit, Prosciutto
2024 Reserve Pinot Noir
Our Reserve Pinot Noir is made entirely from fruit grown at Bowral in the Southern Highlands. 2024 was a warmer than average growing season producing delicate, gentle wines with excellent perfume. Wild fermentation of our 667 clone together with 25% whole bunch grapes has added complexity to the primary red fruit. It has a complex nose of black cherry, raspberry, herbs, ripe spices, and some interesting rich, sweet soil characters. The supportive oak provides depth to the aroma.
The palate is light-bodied, soft and silky, with intense cherry, currant, raspberry and beetroot flavours, leading into a long and satisfying finish. True to our vineyard it is elegant and finely detailed. There are gentle tannins there which will harmonise further over the next year. Minimal filtration may result in a small deposit with time. Great with fuller flavoured dishes such as veal, chicken, duck. Drink now to 2028
Paired with: Grilled Lamb Cutlet, Tarragon Salsa
2024 Reserve Mencia
Grown at our Bridge Creek Vineyard in Orange, at 850m above sea level, this wine shows true cool-climate elegance and fruit. The 2024 season delivered beautifully ripe, perfectly balanced fruit ideal for showcasing this distinctive Spanish variety.
Now in its second release, our Mencia offers fragrant, Pinot Noir-like charm with a savoury twist. The nose is lifted and complex, showing fresh herbs, blood plum, roasted meats, licorice and olive. The palate is light to medium-bodied with excellent natural acidity and a firm tannin finish making it an exceptional food wine. Perfect with grilled meats, sausages or aged cheeses.
Delicious now and will continue to evolve gracefully over the next five years.

2025 Dolce Classico
Crafted from Corvina and Rondinella—two classic Italian varietals grown at 850m on our Bridge Creek vineyard located in Orange, NSW—this wine draws inspiration from the traditional Recioto style of Italy’s Veneto region.
These grapes, most famously used in Amarone, Valpolicella, and Recioto, were partially dried using a prune dehydrator to intensify flavour, texture, and natural sweetness. We are one of only two Australian growers of these varietals, and as far as we know, the only producer of this Recioto-style dessert wine.
Inviting aromas of blackberry, prune, fruitcake, walnut, licorice, and brown spice lead into a rich, velvety palate. With 135g/L of residual sugar balanced by elevated natural acidity, the wine is opulent yet finely poised, finishing with exceptional length and detail. Perfect with chocolate-based desserts—or simply as dessert on its own.
