Winemaker White Paddle

Our Non-Vintage Brut cuvee was made largely from selected Pinot Meunier parcels grown within our Bowral vineyards in the Southern Highlands of NSW (750m). This is our second release of Pinot Meunier sparkling wine and consists largely of the 2019 vintage (80%) with the balance coming from the 2018 vintage (20%).

Being one of the first varieties to harvest from our Bowral vineyard, Pinot Meunier is typically flavour-ripe with moderate acidity, and usually quite a soft and gentle style requiring less time on lees to harmonise than the other classic sparkling varieties (Pinot Noir and Chardonnay). A pale copper colour is consistent with the red-berried Pinot Meunier grape. The nose shows red and yellow apple aromas, ripe strawberry with subtle cinnamon pastry complexities. The palate is soft, generous, and easy to drink, with cleansing acidity. There are ripe palate flavours of strawberry, yellow apple, pear and subtle stone fruit flavours and textures. Fantastic as an aperitif, yet versatile enough to carry through every course of the meal.

Our estate-grown Pinot Gris vines yield wines of varying styles depending on the season—ranging from a light, refreshing Pinot Grigio through to a richer, more textured Pinot Gris.

In 2025, the Winery Block vines exclusively produced a vibrant Pinot Grigio.

To enhance aromatic and textural complexity, a small portion of the wine was wild-fermented in neutral French oak barrels. The resulting wine exhibits enticing aromas of fresh red and yellow apple, nashi pear and subtle hints of tropical fruit. On the palate, the wine is crisp and lively, showcasing bright red and yellow apple flavours that extend through a zesty and textured finish.

This Pinot Grigio is remarkably refreshing and dangerously easy to drink, making it an ideal choice for summer enjoyment. Best enjoyed now through 2029, it pairs beautifully with fresh seafood and seasonal salads.

Pinot Blanc is a white-berried mutation of the genetically unstable Pinot Noir. According to Jancis Robinson, “the main characteristic of wines made from Pinot Blanc are a certain roundness of flavour, verging on apparent sweetness sometimes because the acidity is relatively low. They are gently rather than demandingly appealing, having even fewer distinguishing marks than Chardonnay, and generally rather less body. Most of them are wines to be drunk young.”

The Young Gun of Wine website describes “Not an overly intense or aromatic variety, Pinot Blanc tends to exhibit aromas of white pear, golden apple and white florals. The palate can be simple and light-bodied or taken to quite full richness.

Wines from Alsace and the New World will generally bear the name Pinot Blanc, while wines from Italy will be labelled Pinot Bianco. In Germany, the names Weißer burgunder and Weißburgunder are employed, while Austria will more commonly use the latter, as well as Klevner. The 2026 Reserve Southern Highlands Pinot Blanc is made from fruit grown at the Yaraandoo Vineyard.

The attractive nose offers spicy red apple and nashi pear aromas. The generously flavoured palate has beautiful, ripe red apple and spiced pear flavours with balanced acidity and gorgeous texture as a result of lees stirring after fermentation. Pinot Blanc, with its delicate and versatile flavour profile, pairs well with light poultry, seafood, salads, and creamy pasta sauces.

This wine was made entirely from fruit grown here at the House Block in Bowral.

Gewurztraminer suits our cool climate vineyard well boasting distinctive spicy fragrances of rosewater, lychee, ripe melon, stonefruit and musk.

Neither too big and heavy, nor too light, this style illustrates the spicy perfume and drinkability of Gewurztraminer.

The medium-bodied palate is fresh and juicy with spiced yellow apple, lychee and kiwifruit flavours featuring throughout the textural finish.

This wine is delightfully different and perfect as an aperitif, and great with Asian-styled food. Serve chilled. Drink whilst young and fresh.

This wine was grown at Orange, NSW, at 750m above sea level. It is a slightly warmer site than our Bridge Creek Vineyard, and as such is a little bit more forward and giving as a young wine. Vines were cropped lowly in the cool 2023 growing season producing beautiful, clean fruit with wonderful cool-climate acidity. Traditional winemaking techniques are used to enhance complexity and balance, and only the best barrels make it into the final blend.

Whole bunch pressing followed by wild fermentation of high solids juice in top quality French oak barrels has added spice, wax and hints of grilled nut and nougat aromas to the yellow apple and nectarine core. The textural palate features nectarine and red apple, with beautifully ripened acidity. An elegant and complex Chardonnay style that partners well with roast chicken and veal.
